Turmeric Fish Cakes
Toddler, Kid, Adult
1 lemongrass bulb bruised
2/3 cup coconut milk
5 black peppercorns
1/4 inch ginger grated
3/4 tsp turmeric powder
250 g cod or other white flaky fish like haddock
1 large Russet potato peeled and chopped
2 tsp chopped dill
1/2 lemon zested
Salt to taste
1/2 cup flour
1 egg
1 cup breadcrumbs
Coconut oil for frying
Poach the fish in the spiced coconut milk. Boil the potatoes. Mash all together and season with salt. Mold into cakes, coat in flour, egg and breadcrumbs and fry until golden brown.
