Healthy Cinnamon Pancakes

Blend the pancakes ingredients in a food processor until smooth.
Heat 1 teaspoon of coconut oil or butter over medium in a skillet. Using a 1/4 cup measure, pour in the pancake batter and cook until it sets, 1-2 minutes. Flip and cook the other side for about a minute. Wipe the pan clean with a dish towel between pancakes to prevent burning.
Serve the pancakes with fresh fruit and a drizzle of maple syrup.
