Golden Fish

A suuuuuuper simple dinner that's fancy AND healthy with a generous amount of the healing spice, turmeric.

  • Yields: Serves a family of 4

Ingredients

4 fish filets of a mild white variety like sole, flounder or grouper

salt and pepper

2 tsp turmeric powder

1 tsp sweet paprika powder

1/2 cup flour for dredging

8 sprigs thyme, leaves removed, plus a couple extra sprigs for garnish

3 tablespoons olive oil

1 tablespoon butter

1 lemon, quartered

Directions

Sprinkle the fish on both sides with salt, pepper and 1/2 tsp of the turmeric powder.

In a flat plate or bowl, mix the flour with a bit more salt and pepper, 1 tsp turmeric and paprika powders and thyme leaves.

Dredge the fish filets in the flour, dusting off the excess. Set aside.

In a wide saucepan, heat the oil and better over medium high until the butter melts. Add the remaining 1/2 tsp turmeric and allow the spice to bloom for 10 seconds. Pan fry the fish, about 3 minutes on each side, or until the ends of the filets curl up. Drain on a paper towel and serve with a drizzle of lemon juice and thyme sprigs as garnish along with your favourite sides (we love roast potatoes and asparagus but really, the options are endless).
