
Cauli rice is a fabulous way to add more micronutrients like vit C, anti-oxidants like quercetin, fiber and plant diversity to your meals. If you think it’s a bit uninspiring, make this version. The fennel, cumin and coriander add flavor and a digestion boosting.

RECIPE
Ingredients
- 3(-ish) cups of diced cauliflower (fresh or frozen)
- 1/4 tsp cumin seeds
- 1/4 tsp crushed fennel seeds
- 1/4 tsp crushed coriander seeds
- 1 tbsp avocado oil
- 2 minced garlic cloves
- 1-2 dried red chilis
- 1/2 tsp minced ginger
- 1/2 tsp turmeric
- salt + pepper
- a dusting of black lime (or fresh lime or sumac)
- fresh cilantro or parsley
Method:
Sizzle cumin seeds, crushed fennel seeds and coriander seeds in avocado oil on a medium high flame for a minute.
Add minced garlic cloves, dried red chilis and minced ginger. Sauté for a minute.
Add turmeric and allow it to bloom for a minute.
Add diced cauliflower, salt and pepper and sauté for 5-10 minutes until softened to your liking.
Top with fresh cilantro or parsley, a dusting of black lime and inhale!
