The Indian dish Muttar Paneer gets some plant based love and I know you will LOVE it!
- 1/2 chopped onion
- 2 minced garlic cloves
- 1/2 tsp grated ginger
- 1.5 tbsp of avocado oil
- 1/2 tsp turmeric
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp Garam Masala
- 1 tbsp tomato paste
- 1 cup chopped firm tofu (use organic/sprouted when possible)
- 1/2 cup fresh or frozen peas
- salt and pepper
- a sprinkling of ground cumin, coriander and cayenne
Sauté onion, garlic and ginger in avocado oil for 5-7 minutes. Add turmeric, cumin, coriander and Garam Masala. Sauté for a minute
Add tomato paste and sauté for a minute. Then add tomatoes with their juice and stir everything together for a minute.
Add tofu and peas and cook, stirring well for about 2 minutes. Mix in salt and pepper.
Cover the pot and cook on a low heat for 5-10 minutes until the veggies are softened to your liking.
Adjust the salt to taste and finish with a sprinkling of ground cumin, coriander and cayenne (if you like some heat).
