
Posting this recipe from a few months ago when I was craving a Thai curry and a boatload of veggies which in an of itself fascinates me because I didn’t always crave veggies and ‘healthier’ fare.
I was a sugar and junk food addict for a long time but here’s the incredible thing. The science shows us that by switching your diet in the direction of more plants and more REAL FOOD from Mother Nature, you can literally change your microbiome and your CRAVINGS in days. No joke.
So if you find yourself craving junk, start taking small but determined steps towards more real food. Lots of plants. As close to the earth as possible. And watch yourself start to actually crave greens and veggies and foods that will serve your highest health goals. Effortless delicious health is what we’re aiming for and it’s possible. Trust.
RECIPE

Ingredients
- 3 chopped scallions
- 1 tsp minced ginger
- 3 cloves minced garlic
- 1 sliced lemongrass bulb
- 1 tbsp avocado oil
- 2 tbsp Thai red curry paste (I would usually make my own but quarantine.. so used @thaikitchen which is actually not spicy and perfect for the kiddos!)
- 1 can coconut milk
- 4 cups of water (or veggie stock)
- 1 tsp turmeric
- 1 tsp sweet paprika
- salt and pepper
- veggies of choice (I have carrots, mushrooms, red peppers)
- 1 cubed form organic tofu
- cooked soba or any noodles
- a splash of umami with @yondu.usa (or coconut aminos)
- a sprinkling of coconut sugar
- fresh cilantro
- scallions
- a few Thai red chilis
- a squeeze of lime
Method
Sauté scallions, ginger, garlic and lemongrass in avocado oil on medium high heat for 3 minutes.
Add Thai red curry paste and sauté for a minute or so until fragrant.
Add coconut milk and water. Bring to a simmer.
Add turmeric and sweet paprika, salt and pepper and stir to combine.
Add veggies of choice and tofu.
Cover and cook for 5-8 minutes until the veggies are cooked to your liking.
Add a splash of umami and a sprinkling of coconut sugar.
Adjust the salt to taste.
Ladle into bowls, garnish with fresh cilantro and scallions and a few Thai red chilis if you like things hot. A squeeze of lime if you think you need it. Enjoy!
