
Snow day cardamom oat crepes for the kiddos and the whole fam.
Made with wholesome ingredients and totally delish.

Ingredients
- 1 cup of oat flour
- 1 cup of milk
- 2 eggs
- a pinch of salt
- a dash of vanilla
- 1 tbsp honey or maple syrup
- ground seeds from 2-3 cardamom pods (or 1/4 tsp ground cardamom)
- a small dollop of butter
Method
In a food processor, blend oat flour, milk, eggs, salt, vanilla, honey or maple, and cardamom until smooth and lump free.
Warm a crepe pan or skillet on medium heat. Add butter and brush evenly to coat the pan.
Add 1/4-1/2 cup batter and swirl to make a thin crepe. After 1-2 minutes gently flip the crepe. I must admit a long and thin crepe spatula works really well here!
Cook for another minute or so until you have a nice golden brown lattice pattern.
Fold into a triangle or roll with your fav fillings (toddler loves almond butter in hers).
